How to Use the Flavor Wheel
Understanding the Structure
The wheel is organized in three rings. The inner ring shows 9 broad flavor categories (Fruity, Floral, Sweet, etc.). The middle ring breaks these into subcategories, and the outer ring contains specific flavor descriptors you might taste in coffee.
Using the Wheel
- Hover over any segment to see its description in the details panel
- Click on outer ring flavors to select them and build your tasting notes
- Selected flavors appear in the legend on the right
Tasting Tips
When tasting coffee, start from the center and work outward. First identify the broad category (Is it fruity? Nutty? Floral?), then narrow down to specific descriptors. There's no wrong answer — flavor perception is personal, and the wheel is a guide to help you articulate what you taste.
About the SCA Flavor Wheel
The Coffee Taster's Flavor Wheel was developed by the Specialty Coffee Association (SCA) and World Coffee Research as a tool for describing coffee flavors. First published in 1995 and updated in 2016, it's become the industry standard for coffee professionals and enthusiasts alike.
The wheel is based on the World Coffee Research Sensory Lexicon, which provides references for each flavor attribute. This scientific foundation helps create a common vocabulary for discussing coffee, making it easier to communicate about the complex flavors in your cup.
